    I’ve had flu for the past couple of days. Unsurprisingly, this means that, amongst other things, I have barely been eating. I had some delicious new crop rice last night, but that was about it. (And yes, more will be written about how new crop rice TOTALLY makes a difference…but not now. Oh no.)
Today, despite otherwise feeling really shitty, I really wanted toast. Badly. You might say I had a toast-jones, even. I wasn’t quite to the point where I was clawing at my skin for it, but I had a knead need. And, as the wise philosopher Meatwad once said, “when you have a need, it’s a responsibility.”
I did what any other reasonable baker would do, and knocked together a standard-issue loaf of sandwich bread in no time flat. Bingo bango, in the oven, out, house smells delightful.  I dizzily cut into it with my bread knife (no, really, the room was spinning, the earth was moving, and I’m not sure it was entirely the bread’s doing), heedless of the fact that you shouldn’t really cut bread when it’s still quite so hot and fresh out of the oven.
“But I waaaaaaaants iiiiiiittttt!” my mind said. It neglected to add “my preciouuuuuusssssss” at the end, but it assures me that should be taken as implied.

I ripped into the bread after it had been out of the oven a mere 5 minutes, if that. It didn’t slice prettily because I was so impatient. However, I assure you that the toast I’ve been craving is thoroughly delightful.
I’m still not sure which is sicker, the flu or the Janni. ;)

    Ladies and gentlemen, may I present the panettone? :)

    Light, fluffy, airy…and delightful, especially warm. I don’t think these will last long. Hopefully next time, I’ll have proper pans…or, at least, a coffee can. But these are still quite nice!

    The Pan’s Progress - in which I confess that I haven’t got a proper panettone pan. Yes, you can use buttered coffee cans, but I don’t drink coffee either. I work at places that do, but do I remember to ask for coffee cans? Nyet. So my panettone will be a little wide. Still plenty tall, though—-they get to rise overnight now before I bake them tomorrow morning. :)

    This photo was taken last night, just before going to bed. In just a few short hours, the panettone proofed a ridiculous amount. It’ll slow down, I’m sure, but I’m awfully excited about how this is going to turn out.
For anyone wondering, I used the aforementioned sourdough starter boosted with a tiny bit of active dry yeast. :)
